*KITCHEN DIRECTOR - Settle Down Tavern* Hey Friend! Settle Down Tavern is a sandwich-forward restaurant in a historic building located on Madison's Downtown Isthmus, owned and operated by the team behind Turn Key Supper Club and Oz by Oz.
We are seeking someone with prior experience running a steady kitchen and overseeing a team of 9+ people - which includes many longstanding kitchen team members.
We have a well-kept kitchen waiting for your talents and positive attitude! The job requires someone who can carry the same level of experience, professionalism, and kindness as its previous kitchen director.
The Kitchen Team are all hard-working people who look after each other and respect one another - but most importantly, remember it is a space to feel joy and have fun while working through any ups and downs of a given service.

Previous Kitchen Management experience is required.

*Kitchen Director* Menu Development & Inventory * Make menu planning decisions & Work with Kitchen Team on menu changes * Oversee specials and help nurture creative ideas brought in from other cooks in the kitchen (if they make sense for the restaurant / service) * Communicating any menu/kitchen changes to staff and management * Updating menu descriptions / allergen log / recipes as needed * Place orders to vendors * Maintain inventory & order guides * Manage kitchen food and labor costs (target being <30% food and <20% labor)Identify areas of potential waste * Create food safety policies * Oversee that food storage and cooking areas are kept clean and organized * Maintain/oversee quality and consistency of products * Streamline kitchen processes to maintain prompt service times * Communicate with Owner/Operators about upcoming events or changes in operations Employee Management * Assume a leadership role in the kitchen * Create a prep list each day * Help cooks prioritize which tasks need to be done sooner Admin Duties * Create the schedule for all kitchen staff * Be the point person for staff regarding schedule changes and requests off * Attend weekly manager meetings * Provide guidance and feedback to other kitchen staff * Support all other kitchen workersHelp find coverage wherever there is a gap * Conduct and hold kitchen meetings as needed * Hire new staff and provide training * Conduct one-on-one conversation with staff as needed and conducting employee reviews * Determining and documenting employee write-ups as needed * Communicating any major staffing concerns with the Owners / Operators * Be a leader in conflict resolution within the kitchen * Equipment & Space Maintenance * Scheduling professional cleaning services (hood and grease trap) * Scheduling with appropriate services when repairs are needed * Setting regular cleaning standards for the kitchen and verifying that staff is maintaining sanitation levels Job Type: Full-time Pay: $55,000.
